Tilapia with Tomato-Caper Sauce

I love trying different recipes for cooking all types of fish. A lot of people hate the "fishy" taste and the smell of fish, but if you can find the right sauces/recipes, cooking fish can be an enjoyable main dish!

Another great thing about having fish as a main dish, it doesn't have to be expensive at all! I found these Tilapia packets at the grocery store for $1 a piece. It comes in 4 oz packages so you get perfect portion sizes without any hassle!

Here is what you need for 2 people:
-8 oz of Tilapia Filets
-1 clove of minced Garlic
-1 minced Shallot
-1 chopped Tomato
-1 tbsp drained Capers
-1/8 cup White Wine
-1-1/2 tbsp Olive Oil
-Salt & Pepper to taste

First preheat your broiler. Then brush both sides of the Tilapia with 1/2 tbsp of Olive Oil and sprinkle with Salt & Pepper.

In a saucepan, heat the remaining 1 tbsp of Olive Oil in the pan. Add the Shallots and Garlic to the pan once the oil is nice and hot. Saute for 3-4 minutes while stirring constantly.
Helpful Tip: You will know when the pan/oil is ready for cooking when the oil becomes really "liquidy" and moves across the pan quickly and easily.

After sauteing the shallots and garlic, add the freshly chopped tomatoes and season with salt/pepper to taste. Pour in the 1/8 cup of White Wine, cover the pan and allow the wine to reduce for about 5 minutes. At this time, place the Tilapia in the oven to broil on the middle shelf for 7 minutes.

After reducing the wine, add in the 1 tbsp of Capers and saute for an additional minute.

To serve this wonderfully light and tasty dish, place the broiled Tilapia on the plate and spoon the Tomato-Caper sauce on top. Enjoy the fish along side with some peas and rice!
