Mustard-Molasses Flank Steak

I have to admit, I've really enjoyed eating light and healthy. I always figured if you ate "light" you were eating bland and boring food. But thanks to some intense research and recipe selections, I have been cooking up a storm of fun, exciting and delicious food!

This steak dish I made surprised the heck out of me with how utterly delicious it was and it's approximately only 220 calories! No joke!

Here is what you need for 2 people:
-2-1/2 tbsp Star Balsamic Vinegar
-1/8 cup Fat Free, Less-Sodium Beef Broth
-1 tbsp Molasses
-1 tbsp Whole Grain Dijon Mustard
-1/8 tsp Salt
-1/8 tsp Pepper
-2 (4oz) portions of Flank Steak
-Green Onion (optional)

A couple of hours before you make dinner, throw the balsamic vinegar, beef broth, molasses, whole grain dijon mustard, 1/8 tsp Salt, 1/8 tsp Pepper and the 2 Flank Steaks in a plastic bag. Let it marinate for a couple hours in the fridge.

Once you are ready for dinner, preheat the broiler.
Then remove the steaks from the bag and place it on a pan coated with cooking spray.

Reserve the marinade.

Place the pan with the steaks in the oven on the top shelf and broil one side for 5 minutes. Pull the pan out of the oven and flip it over to the other side. Broil for  5 more minutes.
Smells delicious!

While the steaks broil, place the reduced marinade into a small saucepan. Bring the marinade to a boil and reduce the sauce for about 6 minutes until it has reduced in half. Stir occasionally so the sauce doesn't burn!

Once the steaks are out of the oven, let them sit for a couple of minutes so they can absorb their juices back into them. Then cut the steaks at a diagonal against the grain into thin slices. Drizzle the Mustard-Molasses reduction over top and sprinkle some chopped Green Onion as a garnish.
All I have to say is this....YUM!
I don't even miss all those pointless calories when dinner tastes this good!
