French Onion Soup

Tonight I got home from lab around 4:30 this afternoon and I was so excited to make this recipe! You want to plan ahead with this recipe because it takes about 2-1/2 hours to cook. Even though dinner wasn't ready until 7:00 pm and I was starving, it was well worth the wait!

Here is what you are going to need:
-1/2 stick of Butter
-3 medium sized Yellow Onions-thinly sliced
-1/2 cup White Wine
-2 cups Beef Broth
-2 cups Chicken Broth
-1 clove of Garlic-minced
-2 dashes of Worcestershire Sauce
-Several slices of a Bagette or French Bread
-Couple of tbsp of Butter to spread on the Bread
-1/2 cup of Guyere Cheese-shredded

First, preheat your oven to 400 degrees.
Then melt 1/2 stick of butter in a large pot or dutch oven. Add the onions and stir them around.
Cover the pot and cook on the stovetop for 20 minutes on medium heat.

After 20 minutes, stir them around and then place the pot in the stove for 1 hour.
*It is absolutely important to leave the lid cracked so that the onions can brown properly.
Make sure to stir the onions mid-way through the 1 hour of cooking so the onions don't burn.

Remove the onions from the oven.
Look how beautiful they look! And they smell wonderful too!
With your spoon, scrape the sides of the pot to get all the brown bits....that's the good stuff!

Place the pot of onions back on the stovetop over medium heat and add 1/2 cup of White Wine. Let the wine and onions cook for about 5 minutes so that the wine can reduce. The onions smell even better with the wine!

After 5 minutes, add the 2 cups of beef broth and chicken broth. Stir them around for a minute and then add a couple dashes of Worcestershire and the clove of minced garlic. Place the lid back on the pot/dutch oven and let the soup simmer for 30 minutes.

While the soup is simmering, cut your bagette or french bread into slices and butter the tops of them. Place them in the top rack of the oven and broil the bread until it turns brown and crispy. This takes about 1-2 minutes, so watch your bread!

This is your soup after 30 minutes of simmering, absolutely gorgeous!
Your house is going to smell really good!

To serve the French Onion Soup, fill a bowl full of soup and place 1-2 pieces of toasted bread and then top the bread with 1 tbsp of Guyere cheese. This soup is surprisingly very filling....but so good!

  3. I'm not sure...the bottom of the dutch oven says "technique" and I think my mom got it off of QVC.
