Taco Casserole

Here I am again....avoiding my homework and not writing a lab report on the growth of E.coli.
Which sounds more fun?

THE BLOG WINS!

This recipe was brought into my life by Dusty. It is one of his mom's many yummy and easy to make casserole dishes. I love casseroles!

Here is what you are going to need:
-1/2 package of Burrito-size Flour Tortillas
-1-1/2 lbs of Ground Beef
-1 large Onion-diced
-1 can Cream of Mushroom Soup
-1 can Enchilada Sauce
-2 cups of Mexican Blend Cheese
-1/2 cup Milk

Preheat the oven to 350 degrees.
Slice Tortillas into 1 inch wide strips.

Brown the ground beef with the diced onion. Drain the fat from the pan (trying to be a good person!)

Stir in the Cream of Mushroom soup and the Enchilada sauce into the pan with the meat and onion. Let the sauce simmer and bubble a little bit. Smells good!!!

Now it is time to bring everything together!
Layer the greased 9 x 13 casserole dish with tortilla strips. Then add a layer of meat and then cheese.

Repeat the layering until the casserole is full and finish with a heavy layer of cheese. Pour milk on top of the casserole to keep it moist and from drying out. Cover with aluminum foil and bake for 40 minutes. Then remove the foil and let the top layer of cheese crisp up for an additional 10 minutes. Let the casserole sit for about 10 minutes before serving.
Don't forget to add a dollop of sour cream on top!
