Apple Sunrise Slaw

 
 
Coleslaw is one of my all time favorite BBQ side dishes. The crunchy veggies with the cool creamy dressing pair so wonderfully with the savory and saucy meat. Besides eating the slaw as a side dish, it makes the perfect condiment to pulled-pork sandwiches. Yum!  

 
My favorite part about this coleslaw recipe is that I use "sunrise slaw" as a quick shortcut to make this a simple side dish. It's packaged in the produce department next to all the pre-packaged vegetables like Broccoli, Brussels Sprouts, Green Beans, etc. It consists of shredded carrots, purple cabbage and broccoli. If we have it in our small grocery store, I promise you will have it in your produce section!
 
Plus, the bonus to the ready-to-go shredded slaw is that instead of buying all three vegetables separately, you can just grab a bag and go! Call me lazy, but I love not having to buy all 3 vegetables and spend all that time slicing and shredding. Kitchen shortcuts make this busy mama happy.
 
 
The recipe couldn't be any easier too! All you have to do is combine the sunrise slaw, thinly sliced apples, feta and chives in a large bowl. Next whisk together the creamy dressing and pour it over the slaw. Stir to combine and your done!  
 
Let's not forget the fact that coleslaw is a way healthier option for a side dish at a BBQ or picnic gathering. According to my calorie tracking app, one-fourth of this recipe is approximately 235 calories....and it's a lot of slaw per serving! I'd like to see how much potato salad and macaroni salad I'd get for that amount of calories.
 
 
Apple Sunrise Slaw
Servings: 4
  • 1 (10 ounce) bag of Sunrise Slaw
  • 1 medium Golden Delicious Apple, julienned
  • 1 tablespoon Lemon Juice
  • 2 tablespoons fresh or freeze-dried Chives
  • 1/4 cup crumbled Feta Cheese
  • 6 tablespoons Mayonnaise
  • 1 tablespoon Honey
  • 1 tablespoon Apple Cider Vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
 
Combine the sunrise slaw with the julienned apples in a large bowl. Add the lemon juice and toss to combine with your hands or tongs. Add the chives and feta cheese to the mixture; set aside.
 
To make the dressing, combine the rest of the ingredients (mayonnaise through black pepper) in a small separate bowl. Wisk to combine until smooth and creamy. Pour over top the slaw mixture and stir to combine. Refrigerate to chill or serve immediately.
