I found this recipe on Tasty Kitchen and this soup is a great way to use up all the left over turkey you are going to have from your HUGE Christmas dinner!
This is what you are going to need:
-2 cups cooked, chopped Turkey
-2 strips of chopped Bacon
-1/2 cup diced Onion
-1/2 tsp Thyme
-1 clove minced Garlic
-24oz of sliced Mushrooms
-3 tbsp Flour
-1 cup Chicken Stock
-3 cups Water
-1/4 tsp Paprika
-1/8 tsp Nutmeg
-1 cup Milk
-3 tbsp Heavy Cream
-Salt & Pepper to taste
In a large pot over medium heat, add the chopped bacon and cook until crispy. Remove from the pot and set aside. Don't drain the fat!!!
Add the onions to the pot and cook them until they are softened, about 3 minutes. Add the garlic and thyme to the pot and cook for 30 seconds while constantly stirring.
Add in all the mushrooms to the pot and stir constantly. Cook the mushrooms until they begin to brown and soften.
Add in the flour and cook until the mixture is lightly brown. Stir until there is no appearance of dry flour.
Pour in the chicken broth and stir constantly until the mixture begins to thicken.
Add the water, paprika, nutmeg and leftover chopped turkey.
Bring the soup to a boil and then reduce the temperature so that the soup can simmer. Cook uncovered until the soup has reduced by 1/3 (approximately 20 minutes).
Once it has reduced, add in the milk and simmer the soup for 10 minutes.
Turn off the heat and add the Heavy Cream. Season with salt and pepper to taste.
To serve, pour the soup into a bowl and garnish it with the crispy bacon!

ReplyDeleteThis will definitely go into my 'what to make with left over turkey' file that I've been collecting for a number of years now. It's only usually my husband and I for Christmas, so as you can imagine there's usually a lot of turkey left!! - I think it always tastes better the next couple of days :)
