Truffle Salt Lovin'

Over the summer I have developed a love with Truffle Salt. Dusty and I went to a BBQ that was held at the end of the school year to celebrate surviving the first year of nursing school. One of my friends brought a ton of veggies, olive oil and truffle salt. She was grillin' up veggies right and left, and Dusty and I were devouring them like crazy instead of burgers or hot dogs because of the unique and delicious seasoning of the truffle salt.

This is a miracle in itself because Dusty has never been a big fan of zucchini or asparagus, let alone even go near eggplant or yellow squash! And here he is eating veggies like they are going out of style. After the BBQ I went to World Market and bought my own jar of Truffle Salt and we have been enjoying summer veggies ever since!

I must warn you, truffle salt isn't for everyone. I, myself, LOVE it and could sprinkle this stuff on anything and everything....but my dad thought it was a little too strong taste for his liking, but he is kinda weird with the things he likes and dislikes. Overall, everyone else I know that has tried it loves this stuff!

In conclusion, I just wanted to give a shout out and recommendation on a cooking product that I absolutely love and use all the time!

On a completely different note, tonight I made my Creamy Mustard Roasted Fish and used Plain Greek Yogurt instead of Creme Fraiche and I loved it so much more with the Greek Yogurt! Creme Fraiche is kinda hard to find, so I tried the Greek Yogurt out of convenience and lower cost, and it was a delicious success! The sauce was creamier and thicker, which was absolutely perfect for this dish! Don't you just love cooking? You can experiment with ingredients and discover yummy surprises!

Welcome Back!

I  don't understand how time gets away from me so fast!

Has it really been since April since I last posted on here?!?!?

Well, I missed you guys and writing on here, so I'm back! School starts once again for me next Monday and I can't wait for the semester to begin. This semester in nursing school I get to enter into baby and lady-land. Throughout the semester I will be rotating throughout pediatrics, labor & delivery and all things baby. I'm not gonna lie, I'm a little nervous....I never babysat as a kid and holding other people's children kinda freak me out because I'm scared that I might break them. 

During this summer I got floated to the pediatrics unit at St. V's and the nurse asked me to change a diaper and I kinda freaked. I looked at her and said, "I can change a 60 year old man's diaper like no problem...but with a baby, I have no idea what I'm doing." She stared at me for a moment, giggled and then showed me how to change the baby. Let me tell you what...much easier than a 60 year old man! LOL. So if you need anyone from age 0-100 that needs a diaper change...I'm your gal!

Other things this summer that have occurred besides working at the hospital is that I've done tons of wedding planning! (girly squeal!) The cater and florist are booked. Centerpieces are planned and bought. The only thing on my list to check off  is finding a DJ for the wedding. I have some ideas, so all I need to do is visit and listen to them. Then that can be checked off the list too!

So many ideas! Let the decorating begin!

When it comes to food and cooking, I haven't really been doing anything too exciting on my own. I've actually been planning out my menu's a week in advanced each week and most of the recipes have been coming from some of my favorite blogs. Here are a few of my favorite summer recipes....

I'll leave you with this....the proposed menu for our wedding next summer. It sounds so delicious! 

HORS D'OEUVRE:
 Rainbow Fresh Fruit Skewers - strawberry, orange, pineapple, kiwi and blueberry
 Crostini - with smoked salmon and chive cream cheese
 Purple and Green Deviled Eggs

SALAD:
 Fresh Mixed Greens - grape tomato, cucumber, and parmesan cheese with Balsamic vinaigrette dressing
 Fresh Baked Herb Seasoned Bread - with soft butter

MAIN ENTRÉE:
 Chicken Piccata - baked lightly marinated chicken breast browned drizzled with a lemon, butter, caper, and roasted bell pepper sauce

SIDE DISH:
 Roasted Red Potato - with fresh rosemary
 Fresh Locally Grown Mixed Vegetables

BEVERAGE:
 Water, Lemonade and Coffee

Can it be July 2013 yet???? I'm hungry.
