Good Morning Waffles

In the spirit of comfort food, I made waffles for breakfast this morning!

I love waffles and more importantly, I love my waffle iron!
Yes...it is Hello Kitty!
Look at the cute characters the waffle iron makes!

I also use to have a Hello Kitty TV when I lived in the dorms. It was bright pink and so adorable, it went very well with my pink and brown themed dorm room. Good times!

This recipe is super easy and delicious for a yummy breakfast!

For the waffles, this is what you are going to need:
-1-3/4 cup Flour
-2 tbsp Sugar
-1 tbsp Baking Powder
-1/4 tsp Salt
-2 Eggs-slightly beaten
-1-3/4 cup Milk
-1/2 cup Canola Oil
-1 tsp Vanilla

First plug in your waffle iron and heat it up.
Then in a medium bowl, add all the dry ingredients together and stir to combine.

In a separate bowl, combine all the wet ingredients.

Add the wet ingredients all at once to the dry ingredients.

Stir until the mixture is slightly lumpy.

Spray/grease every nook and cranny with Pam, butter or cooking oil. If you don't, the waffles will stick and it will be an ugly mess. VERY IMPORTANT!

Pour in the batter and shut the wafflemaker.

They take approximately 1-2 minutes until they are golden brown.

Enjoy your yummy breakfast with butter and syrup!

Tuna Casserole

If you have visited my Tasty Kitchen profile, you know that my favorite food is:
TUNA CASSEROLE!

For me, this is total comfort food. I remember this was one of the first dinners Dusty made me when we started dating. I remember I couldn't believe how good it was and how surprised I was that he could cook! This is one of Dusty's moms' classic casserole dishes and it is my favorite for nights when I need some comfort in my meal.

This is what you are going to need:
-1 (12 oz) can of Tuna
-1 (6 oz) can of French's Fried Onions
-1 cup frozen Peas
-1/2 cup minced Yellow Onion
-2 cups Extra Wide Egg Noodles
-3/4 cup cubed Velveeta
-1 can of Cream of Mushroom Soup
-1 Green Onion-sliced
-1/2 cup Milk
-Alpine Touch-to taste

Preheat the oven to 350 degrees and grease your 9 x 13 casserole dish.
Cook the pasta according to package.
Combine the tuna, peas, 1/2 of the can of fried onions, minced onion, green onion, mushroom soup and 1/2 cup of cubed velveeta into the casserole dish.

Stir to combine.

Fold in the Extra Wide Egg Noodles.

Pour in the 1/2 cup of milk.

Sprinkle a good amount of Alpine Touch and then stir to combine.

Top the casserole with the other 1/2 of French's fried onions and 1/4 cup of small cubed velveeta.

Place aluminum foil over the dish and bake for 40 minutes. For the last 5 minutes of baking, remove the aluminum foil and allow the cheese and onions to get brown and crunchy.

Remove the pan from the oven and allow it to set for about 5 minutes.

Serve and enjoy! I know I will!

The Ultimate Sandwich

This is a shout out to all the ladies out there reading this post!
Would you like more presents under the Christmas tree with you name on them?
Do you want your man to spoil you rotten this holiday season?

Then make this sandwich for your man!

On the Pioneer Womans' website, this is her husbands favorite sandwich EVER, and when I told Dusty I was making "The Sandwich" tonight for dinner, he was a very happy person!

This is what you are going to need for 2 people:
- About 1 lb of Cube Steak
-1/2 of a Yellow Onion-sliced
-1 tbsp Lawry's Season Salt
-1/4 cup Worchestershire Sauce
-3 dashes of Tobasco
-2 French Hoagie Rolls
-2-1/2 tbsp Butter

First, cut the onion into nice thin slices.

I'd like to introduce you to the Cube Steak. Notice how there are parallel lines in the cube steak?

Cut against the parallel lines, in a perpendicular fashion. This is important so that the meat slices will stick together and not fall apart.

Also, notice how I have the cube steak on a separate cutting board than the sliced onions?
This is because I'm a Microbiologist, and ground up meat contains bacteria! Practice good food safety by cutting meats and veggies on separate cutting boards and utensils. I hate that my college major has made me so obsessively aware of things like this....sometimes it's just better not knowing what is going on with food.

Now season your pile of cube steak with Lawry's Seasoning Salt and toss it around to every chunk of meat gets some seasoning.

Over medium heat, melt a tablespoon of butter in a large saucepan.

Add the onions to the pan and saute them until they are soft and golden brown.
I love onions!
I practically use them in every dish I make!

Remove the onions from the pan and now add the cube steak. Arrange them on the large saucepan so they are in a single layer.

Cook them for 1-2 minutes and turn them onto their other side to cook.

Once the meat is browned on both sides and no pink. Drain the fat and then add 1/4 cup of Worcherstershire sauce to the pan.

Add a couple dashes of Tobasco.

Add the onions back to the pan and 1 tbsp of Butter.

And stir until combined. Remove the pan from heat and place a lid on it, so the meat stays warm.

Now for the hoagie rolls....
With soft butter, spread a thin layer on each side and toast on a flat surface pan.

Hello gorgeous!

To serve the sandwich that your man will be thanking you for the rest of his life, take a big scoop of meat and onions and put it between the buns.
Oh Lordy, This is so good! YUM!

Venison Meatballs in Red Wine Sauce

This is my second venison dish and I have to say it is a winner!
Both dishes I have made with this meat have been absolutely delicious and I love that there is absolutely no fat in the meat and contains absolutely no preservatives. It saddens me that the deer lost its life, but I appreciate the healthy red meat it has provided me and Dusty.

I found this recipe from Food Network by Emril Lagasse and altered it to what was in my fridge and pantry. Dusty and I loved this recipe and I will be making it again.
I have to! I've got over 20 lbs of venison in my freezer! I gotta get rid of it somehow!

This is what you are going to need for 2 people:
-1/2 lb of ground Venison
-1/2 cup Buttermilk
-1/2 cup Italian Bread Crumbs
-1 tsp Salt
-1/2 tsp Pepper
-1 tsp dried Rosemary
-1 tsp dried Sage
-1/2 cup minced Yellow Onion
-1 tsp minced Garlic (1 to 2 cloves)
-3 slice of Bacon-cut into 1/2 inch pieces
-2 tbsp Olive Oil
-1/2 cup Red Wine
-1/8 cup Flour
-2 cups Chicken Broth
-1/2 tbsp Dijon Mustard
-1/4 cup Heavy Cream
-2 tbsp cold Butter
-1/4 lb Extra Wide Egg Noodles
-Green Onion-to garnish

This sounds like a lot of ingredients, but I only had to purchase a couple of things from the store. Otherwise I found that most of these ingredients are common things found in the pantry and fridge. Don't let the list intimidate you!

First start by heating your large saucepan at medium heat. Add the bacon pieces and cook until crispy. Remove the bacon from the pan and drain with paper towels, but make sure to leave the bacon grease in the pan! Bacon is sooo good!

Add the onions and garlic to the hot pan and saute for 2-3 minutes until they begin to become golden brown.

Remove the onions from the pan with a slotted spoon so not to make the onions really greasy. Place them into a blender or food processor and pulse until the onion/garlic makes a smooth paste.

Just like this!

In a large mixing bowl, combine the ground venison, buttermilk, onion paste, bacon pieces, sage, rosemary, salt, pepper and breadcrumbs. Now get your hands dirty and mix it all together until combined!

Using a cookie scoop or tablespoon, form the meatballs.

Add a tablespoon of Olive Oil to the large saucepan and heat it back up over medium heat. Add the meatballs to the pan in 2 separate batches.

Sear the meatballs all over until brown.

Remove the meatballs from the pan and drain them on a paper towel.

Add red wine to the saucepan and deglaze. To degraze, just simply scrape that bottom of the pan with a wooden spoon to get all the brown bits from what has been cooking previously with the red wine in the pan. Do this for 1-2 minutes. Then remove the juices and place them in a bowl for later use in the sauce.

Next, add another tablespoon of Olive Oil to the pan and add 1/8 cup of flour. This is so you can make a nice light brown roux for the sauce. With your whisk, stir for 3-5 minutes until the roux turns a light brown.

Add the 2 cups of chicken broth and whisk until the roux is completely dissolved. Allow the sauce to boil and then bring it down to a simmer for 15 minutes so that it can reduce.

After 15 minutes of simmering, add the dijon mustard.

And the heavy cream.

Pour back in the red wine juices from deglazing and add the meatballs back into the pan. Cover with a lid and simmer for 20 minutes.

While the sauce and meatballs are simmering, boil and prepare according to packaging the 1/4 lb of extra wide egg noodles. When the sauce and meatballs are done, add 2 tbsp of cold butter and stir until melted.

For the garnish, chop up about 2 to 3 green onions. What ever tickles your fancy!

To serve, place a good spoonful of egg noodles on the plate and top with 4-6 meatballs (depending on how hungry you are!) and sauce. Finish with a sprinkling of green onion for garnish!

Holiday Sugar Cookies

I love the holiday season!
I've already had a huge kick start by decorating my families tree, gingerbread decorating competitions, Cyber Monday shopping and decorating my apartment...and it is only December 1st!

Last night on TV Dusty and I watched Shrek the Halls and How the Grinch Stole Christmas and this instantly put me in the mood to make Sugar Cookies with my new cookie cutters and sprinkles!

Here is what you are going to need for Holiday Sugar Cookies:
-3/4 cup softened Butter
-1 cup Sugar
-2 eggs
-1/2 tsp Vanilla
-2-1/2 cups Flour
-1 tsp Baking Powder
-1/2 tsp Salt

In a large bowl, cream together the sugar and butter. Beat in the eggs and vanilla until smooth. Stir in the flour, baking powder and salt. Cover and chill in the fridge for at least an hour. The longer, the better!

Preheat the oven to 400 degrees, grease the baking sheet and roll out your dough to about 1/4 in thickness. I highly recommend placing the ball of dough and rolling it out between two pieces of parchment paper or wax paper. Using the old "flour" method makes the dough tough and makes a huge mess!

The next step is the best part! Cut your cookies out into any design you want with your cookie cutters!

Place the cookies on the baking sheet and bake for 6-8 minutes. You will know they are done with the bottoms begin to brown. Allow them to cool for 5 to 10 minutes on a wire rack.

Now....you can't have Holiday Sugar Cookies without Frosting and Sprinkles!

Here is what you need for a Basic Frosting:
-1 cup Powdered Sugar
-1/4 tsp Vanilla
-1 tbsp Milk

Blend it together until it is the right consistency and ice your cookies!!!!
And don't forget to add some sprinkles!
